Have you ever tried rice cake?
My ethnic background is Asian and the rice cake is a very familiar food to me. I normally buy them from a Korean market, but I’ve been wanting to try making them at home for a long time.
On the weekend, I finally made up my mind and tried making them. Rice powder was in my freezer for about a month though.
I looked up a recipe for a simple rice cake and pulled out the tools that I had. I was missing many of the tools that were required (😣) because …… I’m just not a big fan of cooking to be honest and my favourite way of cooking is using one-pot recipes or doing improvisational cooking. 😂
But, I had all the main ingredients, so I gave it a try. Haha.
The recipe is from 젤젠 . (It’s Korean blogger and everything is written in Korean.)
Ingredients
- Rice powder 800g
- Water 310g
- Salt 5g
- Sugar 60g
How to make
Make salty water by mixing room-temperature water and salt.
Observe salts melting and disappearing in the water.
Put the salty water little by little into the rice powder and knead it.
This is about the consistency that you want to have; I think it will be better if it’s a little more dry though. (😝 Yes, I know I’m a little scrappy in cooking. Sorry! But they came out okay in my opinion. The goal of my post here is giving you an idea of having a quality time with children working on the same project and helping you to have a healthy snack or meal.💛)
The mixture should be sifted now.
First, I tried sifting with a sieve. But I quickly realized that it was not doable for my mixture. My mixture was too wet and clumpy and my sieve was too fine. So I just put the mixture in a manual food chopper. 🤪
The powder mixture was not very fine but this was my best so I just used it like this.
Add sugar to the mixture and mix it with a spoon.
Fill the silicone cupcake liners with the final mixture.
I could fit 7 liners in my 6 Quart Instant Pot.
Put a steam rack in the Instant Pot and put the filled cupcake liners inside the pot.
Pressure cook for 20 minutes and leave it for extra 5 minutes.
After the extra 5 minutes, you can slowly open the valve and let the steam out. When all the steam is out, open the lid.
They are not very soft but chewy and yummy. I think this consistency is actually better for children to hold it and eat it.
It was Mother’s Day yesterday in Canada, so I packed some and went to see my mom and dad in the park. 😊
If your child likes rice or you want to try it for the first time, try making this rice cake snack. It’s subtly sweet and very filling. As you saw, you can be scrappy at cooking like me. The final product will be okay and your child will like it – especially when they are warm. 👌
Cooking together is a great way to connect with your child. Plus, you will get some yummy snack at the end. Try it when you crave some rice cakes or just a light snack!
