[Cooking] Carrot Farm Chocolate Muffin

Chocolate muffin?!

Yay! I love chocolate and I like chocolate muffin, too.

How about you? How about your children?

Well, I always try to limit my sugar consumption as sugar is not healthy, but I allow myself to have some sweets as a treat sometimes.

When I found this chocolate muffin recipe, I was excited. This recipe is from Making Thyme for Health.

Why was I excited? Because it can be made without flour and sugar!

I am always reluctant to suggest making an unhealthy dessert for kids πŸ˜–. But this one, I can recommend to parents. Haha.

Here, I will share my photos from yesterday’s baking.

Also, I will highlight the tasks that children can do.

The main ingredients for the recipe are ripe bananas, oatmeal and peanut butter.

Children:

  • Mash the bananas.
  • Crack the eggs.

Children: Measure the oatmeal.

The recipe says to use rolled oats, but I only had quick oats at home and that’s what I used.

Children: Measure the other dry ingredients and mix.

Dry ingredients are mixed together.

Another good thing about this recipe is that the batter can be made in a blender – easy to do it with children!πŸ‘

Children: Push the button on blender.

You have to use a high speed blender like Vitamix to make the best texture but again, I don’t have Vitamix so I just used my regular blender πŸ€·β€β™€οΈ – They still came out great!

I didn’t mind having some big pieces of oatmeal.

The batter was quite thick.

Children: When the batter is ready, fill the muffin tin with the batter.

This part might not be that easy for children since the batter is thick. In the original recipe, the batter goes straight to the muffin tin – without the cupcake liners, but greased with oil. This will make the filling process easier. Or if you have silicone cupcake liners, children can fill the liner first and then put the liner into the muffin tin.

Children: Add chocolate chips on the top.

I put chocolate chips only on the top and baked them in the oven.

This is when they just came out of the oven. Looked good! Smelled good! Let them cool down a little bit.

Cut a carrot into small pieces. I tried to make a long triangle shape – like a carrot. Make sure one side of a carrot piece is pointy because it should be poked into the muffin.

Prepare bunny crackers as well.

Children can take the lead hereπŸ‘

Ask your child to plant some carrots on the farm!😜

Then, bring the bunnies to the carrot farm! πŸ˜‹
